Milk rice with dried grapes and cardamom
(Recipe for 4 people)
150 g Carolino rice
2L of whole milk
50 g dried grapes
2 g cardamom powder
200 g sugar
1 vanilla pod
Salt to taste
1 tablespoon butter
50 cl water
100 ml coconut milk
Cinnamon powder to taste
Bring the whole milk and coconut milk with cinnamon to the boil and set aside.
In a separate pan, boil the water with a pinch of salt and the vanilla pod and add the rice, stirring constantly until the water is completely absorbed.
Using a ladle, add the milk little by little, continuing to stir. When the rice is almost cooked, add raisins and cardamom to the mixture, stirring well.
Add the sugar and stir continuously until the rice has reached a creamy consistency. Remove from the heat, add a tablespoon of butter and mix well.
Place in an earthenware container, leave to cool and decorate with cinnamon powder to your liking.
Tip: You can also serve the rice dessert with pistachios.
