(Recipe for 4 people)
150 g Carolino rice
2L of whole milk
200 g sugar
1 vanilla pod
Salt to taste
3 egg yolks
1 tablespoon unsalted butter
50 cl water
Cinnamon powder to taste
Bring the milk with three orange peels to the boil and set aside.
In a separate pan boil the water with a pinch of salt and the vanilla pod and add the rice, stirring constantly until the water is completely absorbed. Using a ladle, add the milk little by little, continuing to stir.
In a separate bowl, beat the egg yolks and set aside.
When the rice is almost cooked, remove some of the milk and add it to the egg yolks. Gradually add them to the mixture, stirring well.
Add the sugar and stir continuously until the rice has reached a creamy consistency.
Remove from the heat, add a tablespoon of unsalted butter and mix well.
Place in an earthenware container, allow to cool and decorate with cinnamon powder to your liking.
Tip: you can also serve the rice dessert with sliced strawberries to give it a fresh touch.
