Riz rouge with black garlic and marinated courgettes

(Recipe for 4 people)

Ingredients

150 g courgettes
100 g of riz rouge
3 cloves of black garlic
50 g vinegar
1 tablespoon extra virgin olive oil

Preparation

Slice the courgettes thinly and brown them over a low heat, turning frequently without oil until crispy (about 10 minutes cooking time). Place the prepared courgettes in a bowl with 1 tablespoon oil and 2 tablespoons vinegar. In another pot, cook the riz rouge in plenty of salted water for 28 minutes. Drain and mix with the marinated courgettes prepared as described above. Decorate to taste with courgettes and sliced black garlic.
