Classic Italian-Style Rice Salad


(Recipe for 4 people)


Superfine rice gr. 280
Tuna gr. 100
Cooked ham gr. 80 (in a single slice)
Celery gr. 60
Mushrooms in oil gr. 60
Peas gr. 50
Fontina cheese gr. 50
Gherkins in vinegar gr. 40
Carrots gr. 40
Parsley gr. 20
Pitted green olives no. 10
Hard-boiled eggs n. 1
Extra virgin olive oil to taste
Salt and pepper to taste


Boil the rice for about 15 minutes, cool it quickly. Dice the cooked ham, fontina cheese, celery, mushrooms, olives and gherkins.

Cook the peas and carrots cut into sticks. Drain the tuna and add it to the vegetables. Cook the hard-boiled egg for 8 minutes, cool it and cut it into 4 wedges.

Add all the ingredients to the rice, season with oil and lemon juice and salt and pepper, sprinkle with chopped parsley and decorate the dish with the boiled egg segments.
